All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The hamburger reach-in w/well was 44 F and the sliced tomatoes at the prep table were 43 F. Provide <br />41 F or below today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: Time was not being maintained for the sliced cheese at the prep table. Wendy's has a total 8 hour hold <br />time for cheese (1 hr temp and 7 hr at prep table). Cheese was taken out at 7 AM for temper. Maintain accurate <br />records/documentation when time is used as the public health control and do not exceed max hold time.
