Store raw meat <br /> separate from or under non raw meat products to prevent contamination. Correct immediately. <br /> Observed uncovered rice in market walk-in. Cover food items when stored to prevent contamination. Correct immediately. <br /> Observed containers stored directly on top of uncovered food items in 2 D Atosa prep top. Cover food items prior to storing <br /> items on top to prevent contamination. Correct immediately. <br /> Observed 3 comp sink used used for produce prep when there were dirty utensils in the other sink compartments. If 3 comp <br /> sink will be used for both food prep and warewashing then only one process may be done at a time and washing must be <br /> done in batches to prevent contamination.The 3 comp sink must be cleaned and sanitized before and after being used for <br /> food prep. Correct today. <br /> CALCODE DESCRIPTION:All food shall be separated and protected from contamination. Store food items in labeled containers once <br /> packaging/bag is opened. Correct today. <br /> Observed bags of flour and onions and boxes of tortillas stored on the floor in the side storage room. Observed box of meat <br /> stored on floor in market walk-in. Store all food items at least 6 in. above the floor. Correct today. <br /> Observed unlabeled containers in side storage room. Provide labels today. <br /> CALCODE DESCRIPTION:Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br /> above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069(b)) <br /> #38 Approved/Sufficient Ventilation and Lighting <br /> OBSERVATIONS:The light build in the storage area behind the kitchen did not have a light shield. Provide light shield <br /> within 1 week. <br /> CALCODE DESCRIPTION:Exhaust hoods shall be provided to remove toxic gases,heat,grease, vapors and smoke and be approved by <br /> the local building department. Canopy-type hoods shall extend 6"beyond all cooking equipment.All areas shall have sufficient ventilation <br /> to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window,an air shaft,or a <br /> light-switch activated exhaust fan,consistent with local building codes. (114149, 114149.1)Adequate lighting shall be provided in all areas <br /> to facilitate cleaning and inspection.Light fixtures in areas where open food is stored, served,prepared,and where utensils are washed <br /> shall be of shatterproof construction or protected with light shields. Store/sanitize wiping cloths <br /> between uses in sanitizer bucket with at least 100 ppm chlorine. Correct immediately. <br /> CALCODE DESCRIPTION: Wiping cloths used to wipe service counters,scales or other surfaces that may come into contact with food <br /> shall be used only once unless kept in clean water with sanitizer.
