All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures Major <br />OBSERVATIONS: Observed pieces of raw meat set out for drying on shelf in meat department outside market walk-in near <br />side door. Per employee the meat has been drying for about 1 day. Discontinue practice immediately, potentially hazardous <br />foods must be kept at 41 F or below when not actively being prepped. Contact CDFA and obtain a valid license prior to <br />drying meat outside of refrigeration. Corrected on site, the carne seca on the shelf and in display case were discarded. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />OVERALL INSPECTION NOTES AND COMMENTS <br />No Temperature Data Collected <br />FOOD ITEM -- LOCATION -- TEMP º F -- COMMENTS <br />COMMENTS AND OBSERVATIONS <br />Complaint inspection. <br />Facility dries meat at room temperature on shelf outside market walk-in to make carne seca sold at meat department. <br />Facility currently does not have approval or license from CDFA for drying meat. <br />Cease this practice and contact Contact California Department of Food and Agriculture (CDFA) Meat, Poultry, and Egg Safety <br />Branch (916) 900-5004 to get license for drying meats outside refrigeration. <br />Discussed report with Candy Pena. <br />No signature captured. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
