Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:REPEAT: Copies of the 5-year food manager and 3-year food handler certificates are not on site. One <br /> person is required to have a 5-year food manager certificate.All other employees that are handling food are required to <br /> obtain the 3-year food handler certificate within 30 days from date of hire. Refill the paper towel dispenser and <br /> maintain stocked at all times to ensure employees are properly washing their hands as needed. Correct today. <br /> --------------------------------------- <br /> Paper towels and hand soap are available at the bar hand sink but are not inside dispensers. Provide a wall-mounted paper <br /> towel dispenser and hand soap dispenser and maintain stocked at all times. <br /> CALCODE DESCRIPTION:Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br /> maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing,food preparation and the washing of <br /> utensils and equipment. (113953, 113953.1, 114067(17) <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:REPEAT:The following units for cold storage of Potentially Hazardous Foods (PHFs)were observed <br /> over the required temperature of 41 F: <br /> -Saba Air 2-dr prep cooler was observed at 45 F <br /> -2-dr cooler at the waitress station was observed at 44 F <br /> -3-dr prep cooler across cook line was observed at 43 F <br /> Adjust/repair units to maintain all PHFs at 41 F or below. PHFs held less than four hours and under 50 F need to be <br /> transferred to a cooler at 41 F immediately. Discard PHFs if 50 F or higher. Correct today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F.
