Per manager the bacon was placed there at 10 AM. Provide <br /> 135 F or above when hot holding PHFs, if time will be used as the public health control then maintain records/documentation <br /> and do not exceed 4 hour max hold time. Remaining items after 4 hour hold time must be discarded. Corrected on site, <br /> remaining bacon at 2 PM will be discarded. <br /> The 1 D display warmer was 131 F.The chicken, sauce, and several food items inside were 116-120 F,the eggs were 165 <br /> F. Per manager the items were placed in the warmer around 10 AM. Maintain food items at 135 F or above when hot <br /> holding. Corrected on site,the items were removed from the warmer and set to cool and will be placed in the walk-in. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F.
