Dishwasher may be <br /> used for wash/rise but utenisls/equipment must be manually sanitized at 3 comp sink and then air dried. Provided warewash <br /> sticker to employee and operator. Manually sanitize utensils/equipment at 3 comp sink with at least 100 ppm chlorine until <br /> dishwasher is serviced and produces 50 ppm chlorine minimum. Corrected on site, utensils will be manually sanitized at 3 <br /> comp sink until dishwasher is serviced. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
