All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #21 Hot and Cold Potable Water Not Available MAJOR <br />OBSERVATIONS: The water at the 2 comp sink/hand sink was 118 F when the handle was part way turned and it was 94 <br />when the handle was fully turned. The 2 comp sink has an instant water heater. Per staff the warmer from the warmer is <br />used to provide hot water when washing. This kind of procedure is to be used only in emergencies and not regularely. <br />Provide hot and cold water with hot water at 120 F minimum from faucet head. Provide water that is 100-110 F when <br />washing utensils with detergent and at least 100 F when washing hands. If serving utensils can not be properly warewashed <br />on site then they should also be sent back to the Stockton Community Kitchen for warewashing along with other utensils. <br />Corrected on site, explained to staff hot water requirements for warewashing and hand washing at 2 comp sink. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The 2 comp sink/hand sink did not have soap during the inspection, a detergent bottle was being used. <br />Provide soap dispenser at this hand sink today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Per employee the serving utensils are partially submerged in the sanitizer bucket when warewashing for <br />sanitizing. No warewashing was being done during the inspection. Provide proper warewashing for utensils. Utensils must <br />be fully submerged in sanitizing solution for at least 1 minute when quat is used and then air dried. For a 2 comp sink after <br />utensils are washed with detergent/warm water and rinsed they can be set aside temporarily while a sink compartment is <br />filled with 200 ppm quat sanitizing solution. Corrected on site, went over proper warewashing technique with employee and <br />provided warewashing sticker for minimum concentrations and contact time. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
