COMPLAINANT ORDERED <br /> BATTERED BONELESS CHICKEN NUGGETS.WHEN EATING, COMPLAINANT NOTICED A RAW CHICKEN TEXTURE. <br /> COMPLAINANT SPIT PIECE OUT INTO A NAPKIN AND NOTICED THE INSIDE HAD NOT BEEN COOKED.ALL OTHER <br /> PIECES WERE RAW ON INSIDE AS WELL. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures Major <br /> OBSERVATIONS:Chicken nuggets coming out of the fryer are 133-136F.The nuggets are not fully cooked to 165F.All raw <br /> chicken products must be cooked to an internal temperature of 165F (minimum). Use a thermometer to verify proper <br /> cooking temperature. Correct today. <br /> Corrected on site. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> chicken nuggets-out of fryer--133.00°F--133-136F range <br /> COMMENTS AND OBSERVATIONS <br /> Owner is on site and is not aware of the complaint. <br /> Per owner,the product used are Tyson Red Label uncooked chicken nuggets.The nuggets are received frozen and remain <br /> frozen until a customer orders them. Nuggets are placed in the fryer and cooked for 3-5 minutes or until they float in the oil.A <br /> timer is not used and a temperature is not taken. <br /> At the time of the inspection,three nuggets were placed in the fryer and fried until they floated in the oil. The internal <br /> temperature of the nuggets were 133-136F.
