<br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of

<br />OBSERVATIONS: Observed two blue colanders inside the first and second compartments of the 3-comp sink that are
<br />being used for straining food items. Both colanders have orange mildew buildup in the perforations. Thoroughly wash and
<br />sanitize colanders to avoid contamination of food. Correct today.

<br />Observed unclean cardboard liners beside cooking equipment, in wash area, and prep table beside chef's line. Remove
<br />cardboard as it is not a cleanable surface for prevention of food contamination. Correct today.

<br />OBSERVATIONS: The two prep coolers, microwave, and rice warming equipment had dried-on food debris and grease on
<br />the outer surfaces and handles. Deep clean all equipment and maintain clean daily. Correct today.
