All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: Tomatoes, cheese and lettuce on the prep line, held for more than 4 hours time control, have temp at <br />54F. Provide 41F or below immediately. Person in charge voluntarily discarded the potentially hazardous food and brought <br />new batch at the prep line. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #8 Use of Time as a Public Health Control MAJOR <br />OBSERVATIONS: Tomatoes, cheese and lettuce on the prep line, are lacking the 4 hours time control sticker. 4 hours time <br />control log is not maintained. Maintain the log immediately. Corrected on site. New batches of tomatoes, cheese and lettuce <br />are placed at the prep line with the 4 hours time control stickers. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br /> #44 Premises: Clean/Litter Free; Vermin-Proof <br />OBSERVATIONS: Drive thru window air curtain is turned off during my inspection. Turn on air curtain at all times during <br />operating hours to keep facility vermin proof.
