All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM -- LOCATION -- TEMP ° F --COMMENTS <br />No Temperature Data Collected <br />COMMENTS AND OBSERVATIONS <br />Complaint inspection. <br />As per person in charge, she is not aware of the complaint. <br />Raw chicken is received either frozen to be stored in the walk in freezer or cooled at 41F to be stored in the walk in cooler. <br />Batches are pulled from the walk in freezer 48 hrs prior to be thawed in walk in cooler. Regular and crispy chicken are cooked <br />in pressure cooker at 350F for 16 minutes to be held on the hot hold for 2-4 hours time control. popcorn chicken, fries and hot <br />wings to be fried in the open fryer at 350 for 4-9 minutes then held on the hot hold for 2-4 hours time control. Raw chicken <br />walk in cooler temp is at 41F. Cooked regular, crispy chicken, hot wings and hot hold units are at 135F or more. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
