All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: 3 comp sink has temp at 119F. Provide 120F or more today. Corrected on site. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #30 Food Storage/Display Properly Labeled <br />OBSERVATIONS: One dry food container is lacking label. Provide label today. <br />Baked bread tray is stored at 3 inches off the floor in the walk in cooler. Store food at least 6 inches off the floor today. <br />Corrected on site. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069 (b)) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: Exterior surfaces of dough mixers and lid of container, underneath the 3 comp sink, have flour build up <br />and sticky dough spatters. Clean exterior surfaces of equipment and food container today and as needed. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #34 Warewashing Facilites Maintained <br />OBSERVATIONS: I observe dirty utensils stored in the rinsing compartment of the 3 comp sink. Remove the dirty utensils in <br />the washing compartment and clean the rinsing compartment of the ware wash sink to properly wash utensils. Correct <br />today. <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method.
