Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: 2 D Turbo Air reach in cooler/ under prep table, sliced tomatoes and onion, at the sandwiches prep line, <br />have temp at 46F. Provide 41F or below today. <br />Food items, on hot hold open case unit at the Deli Department, within 4 hours from cooking time, have temp 123F. Provide <br />135F or above at all times to be checked every 2 hours/ use 4 hours time control with maintaining log. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: Exterior surfaces of the cooking equipment, hood filter and exterior and interior surfaces of the 2 D reach <br />in cooler, sandwiches prep line, have grease accumulation and food debris. Clean surfaces today and as needed. <br />I observe food debris, on the sliding doors rails of the deli/ salad display cooler in the Deli Department. Clean surfaces today <br />and as needed. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: All products walk in freezer has ice build up on the left compressor pipe. Repair unit in 1 week. <br />Hood filter, at Deli Department, has 2 gaps.
