Prior to the inspection, we discussed me conducting the inspection <br />without her present. Operator stated that was fine. <br />Operator states the commissary is used for food prep prior to her events (cutting produce, making salsa, etc.) The cooking <br />equipment is not utilized (she cooks on site at her events). Operator states she uses the walk-in cooler for food storage (the <br />walk-in cooler was not in use as a refrigeration unit at the time of the inspection).
