ALSO EMPLOYEES ARE DRY-LOGGING TEMPERATURE AND SANITIZER <br />CONCENTRATIONS IN THE LOG BOOK AND NOT ACTUALLY TAKING THE READINGS. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Dish washer chlorine is between 25 ppm - 50 ppm. Provide chlorine 5Oppm today. <br />Facility will be using the ware wash sink to manually wash utensils using QUAT 200 ppm for sanitization/ or using the dish <br />washer to wash and rinse and use the sanitizing compartment of the ware wash sink to sanitize utensils till repair. <br />CAL CODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Food temp logs are <br />maintained. <br />I inspected the QUAT dispenser at the ware wash sink. QUAT is at 200 ppm. Chlorine and QUAT strips are available on site. <br />2 D cooler and walk in cooler have temp at 41F. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
