Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The 2 D Turbo Air reach-in w/prep top was 50 F, the sliced tomatoes in the prep top were 49 F. Per <br />operator this was due to a lunch rush and constant use of unit. Provide and maintain PHFs at 41 F or below. Correct <br />immediately. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #32 Food Properly Labeled and Honestly Presented <br />OBSERVATIONS: Observed grab and go sandwiches, deviled eggs, tri tip, and raw meat in market walk-in display. Labels <br />were lacking complete labels, most had only common name and weight. Provide complete labels for grab and go items and <br />packaged meat that include the common name of the product, ingredients if more than one listed by predominance of <br />weight, weight of product, and name and address of facility where it was made/packaged. Provide complete labels on grab n <br />go and meat packages or at point of service today.
