Provide hot water at 100 F minimum for <br /> the the restroom hand sinks that are being utilized by kitchen staff. Clean within one week and maintain as <br /> needed. <br /> CALCODE DESCRIPTION:Exhaust hoods shall be provided to remove toxic gases,heat,grease, vapors and smoke and be approved by <br /> the local building department. Canopy-type hoods shall extend 6"beyond all cooking equipment.All areas shall have sufficient ventilation <br /> to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window,an air shaft,or a <br /> light-switch activated exhaust fan,consistent with local building codes. Store wiping cloths <br /> that are still in use inside a bucket containing sanitizing solution at 100-200 PPM chlorine or 200-400 PPM quat. Place <br /> wiping cloths that are no longer in use inside the dirty linen bag away from food prep and food storage areas.
