All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: MAJOR: The butter and pico de gallo at the ice bath in the kitchen are 61-62F. Per employee they have <br />been out since 8am. The ice has melted. Maintain cold food at 41F or below. Correct today. Items were discarded. <br />MINOR: Many cold food temperatures are warmer than 41F (43-46F: see food temperatures recorded at inspection notes <br />and comments section). Cold food shall be maintained at 41F or below. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Food Handler Cards for employees on site this date are not available. Maintain employee's Food Handler <br />Cards on site and accessible. If an employee lacks the 3 year Food Handler Card, their card has expired, or they are a new <br />hire, the 3 year Food Handler Card shall be obtained by 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #4 Employee Eating, Tasting, Drinking or Tobacco Use <br />OBSERVATIONS: Observed an employee's personal food (chips and salsa) at the drainboard between the dish machine <br />and the 1 comp prep sink. Designate an area for employee's food that is away from food preparation and warewashing <br />areas. Correct today. <br />CALCODE DESCRIPTION: No employees shall eat, drink, or smoke in any work area. (113977) <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: The hot water at the bar hand sink is 83F (re-checked twice). Increase the temperature of the hot water <br />at this sink to 100F (minimum).
