SA <br /> <br />JOAQUIN <br /> Environmental Health Department <br />Time In: 1:39 pm <br />Time Out: 2:18 pm <br />COMPLAINT INSPECTION REPORT <br />Name of Facility: TEXAS ROADHOUSE #703 Date: 04/20/2023 <br />Address: 2422 NAGLEE RD, TRACY 95304 <br />Owner/Operator: ARMADILLO HOLDINGS LLC Telephone: (925) 549-8649 <br />Program Element: 1600 - FOOD PROGRAM Complaint #: C00055755 <br />Responsible Party Contact: <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />The San Joaquin County Environmental Health Department received the following complaint: <br />C00055755 states: COMPLAINANT STATES THAT SHE AND HER FATHER WENT TO THE FACILITY ON 04/07/2023 <br />AND HAD THE GRILLED CHICKEN AROUND 11:30 AM. COMPLAINANT STATES THAT AROUND 10AM THE NEXT <br />MORNING BOTH HER AND HER FATHER BECAME SICK, DIARRHEA, STOMACH CRAMPS, CHILLS, MUSCLE <br />FATIGUE, AND VOMITING. COMPLAINANT STATES SYMPTOMS LASTED 3 DAYS. NO DOCTOR WAS SEEN. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />OBSERVATIONS <br />Name on Food Safety Certificate: <br /> <br />Expiration Date: <br /> <br />Warewash Chlorine (Co: ppm Heat: 160 ° F Water/Hot Water Ware Sink Temp: 120 ° F <br />Quaternary Ammonia (QA): PPm <br />FOOD ITEM -- LOCATION --TEMP ° F -- COMMENTS <br />chicken at chef drawer -- 35.00° F <br />herb chicken -- 179.00° F <br />dish machine -- 160.00° F <br />Hand Sink Temp: 100° F <br />walk-in cooler -- 40.00° F <br />grilled chicken-- 181.00° F <br />meat walk-in cooler -- 37.00° F <br />COMMENTS AND OBSERVATIONS <br />Manager on duty (MOD) is not aware of the complaint. Per MOD, no employees were sick around that time. If an employee is <br />ill, they usually call in. If an employee appears to be ill at work, they are sent home. MOD states employees are good about <br />self-regulating and wear masks upon return to work. <br />Raw chicken is stored solely in the meat walk-in cooler. Chicken has a designated cart for chicken only. The chicken is <br />defrosted in the meat walk-in cooler and then goes straight to the service line. <br />Upon inspection this date: no employees are visibly ill, chicken is stored at proper temperature, chicken is being cooked to <br />proper temperature, chicken is stored properly to prevent cross contamination, hand sinks are properly supplied, facility has <br />hot water, the dish machine is functioning properly, and wiping cloth buckets have the appropriate sanitizer concentration <br />level. <br />No major violations identified this date. <br />FA0017922 C00055755 SC004 04/20/2023 <br />EHD 16-23 Rev. 04/07/22 <br /> Page 1 of 2 Complaint Inspection Report <br />1868 E.
