Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #21 Hot and Cold Potable Water Not Available <br /> OBSERVATIONS:The hot water at the three compartment sink was observed at 109 F and 107 F at the prep sink. The <br /> mop sink did not have any hot water. Adjust hot water heater so that hot water is a minimum of 120 F at these sinks. <br /> Re-connect/repair mop sink so that it has hot and cold water. Thaw food items under <br /> refrigeration or completely submerged under cold running water. Thawing should be done in prep sink not the three <br /> compartment sink. Correct today. <br /> CALCODE DESCRIPTION:Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br /> to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br /> OBSERVATIONS:Observed build-up on the deflector plate of the ice machine. Clean and sanitize to protect food from <br /> contamination. Correct today. <br /> CALCODE DESCRIPTION:All food shall be separated and protected from contamination.
