Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization Major <br /> OBSERVATIONS:The three-compartment warewash sink was in disrepair. The third compartment drainage pipe was <br /> disconnected underneath. The facility is not able to properly warewash using the required wash, rinse, sanitize method. <br /> Repair three-compartment to proper working order. Correct today. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized. (I 13984(e), 114097, <br /> 114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115(a, b, d), 114117, 114125(b), 114135, 114141) <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> No Temperature Data Collected <br /> COMMENTS AND OBSERVATIONS <br /> Complaint investigation.Went to facility and observed four pipes leading to an outdoor floor sink. Observed some residual <br /> grease inside the larger black pipe but not actively releasing. I did not observe any backing up of the waste water or grease <br /> from the outdoor floor sink. Spoke the employee who was able to connect me with owner via phone call. Owner stated the <br /> pipes are from the freezer, ice machine, and the indoor floor sink. Per owner,the pipes empty into outdoor floor sink which <br /> leads to the grease trap. Received text from owner with invoice documentation for last service for grease trap done on March <br /> 04, 2023. Owner stated the pipe with the grease was closed and will be capping it.After the phone call, employee granted <br /> access to kitchen floor sink. Observed the third compartment of the warewash sink was disconnected,which is a major <br /> violation.A reinspection will be done to verify correction.
