All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: The dishwasher produced less than 50 ppm chlorine when run. Manually sanitize utensils with 200 ppm <br />quat or 100 ppm chlorine minimum at 3 comp sink until dishwasher is serviced and provide 50 ppm chlorine ppm minimum <br />at dishwasher. Corrected on site, utensils will be manually sanitized with 100 ppm chlorine minimum until dishwasher is <br />serviced. <br />The sanitizer dispenser at the 3 comp sink was not dispensing any sanitizer as the bottle was empty. The dispenser is used <br />to fill the sanitizer bucket, the sanitizer bucket did not have any sanitizer. A replacement sanitizer bottle was not available <br />during the inspection. Manually mix sanitizing solution for buckets and at 3 comp sink to provide 100 ppm chlorine minimum <br />until dispenser is serviced and provides 200 ppm quat minimum. Corrected on site, sanitizing solution will be manually <br />mixed to provide 100 ppm chlorine minimum until dispenser is serviced. The sanitizer bucket was 200 ppm chlorine. <br />Email evidence of correction for dishwasher and sanitizer dispenser to dafonskaia@sjgov.org by 5/1/2023 or there will be a <br />chargeable re-inspection. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
