All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: A pitcher is filled with quat sanitizing solution and is used to sanitize serving utensils on site, the utensils <br />were not fully immersed in the pitcher and some did not fit inside. Per employee they put the utensils in the pitcher one way <br />and they flip them around and submerge them the other way after awhile. Utensils must be fully submerged in sanitizing <br />solution with at least 200 ppm quat for 1 minute. For 2 comp sink warewashing the after the washing and rinsing is done, the <br />utenils can be set aside in a clean area and a sink compartment is cleaned and then filled with sanitizing solution. Instructed <br />employee and manager on warewashing requirements. Provide proper wareashing procedure today. <br />A spray bottle was on the counter in the kitchen/serving room. Per employee it was a sanitizer bottle when when tested there <br />was not sanitizing in it. Do not spray when there is open food in room and provide 200 ppm quat minimum sanitizing solution <br />in sanitizer bucket or spray bottle to sanitize food contact surfaces.
