Remove cardboard to provide <br />cleanable surface. Correct today. <br />Observed holes/gaps in kitchen wall around walk-in entrance, observed hole in front walk-in wall. Seal holes/gaps and <br />provide smooth, cleanable surface. <br />Observed foam insulation in ceiling of walk-in cooler and taped cardboard on the ceiling of the walk-in freezer. Provide <br />cleanable surface. Correct within 2 weeks. <br />Observed exposed wood around kitchen walk-in entrance and behind women's restroom hand sink. <br />Observed holes in kitchen in bakery above 3 comp sink and in both restrooms. Observed water damaged ceiling in bakery <br />and kitchen. Repair ceiling within 3 weeks. <br />Observed damaged/missing coving in bakery around 3 comp sink and near entrance to kitchen. Observed <br />damaged/missing coving in kitchen around walk-in. The interior of the front walk-in did not have any coving. <br />Provide/Replace with approved coving within 1 month. <br />Observed damaged floor tiles in customer area near front walk-in. Repair/replace flooring within 1 month. <br />Observed damaged flooring in both restrooms. Replace with approved flooring such as commercial sheet linoleum or floor <br />tiles with cove tiles. Provide minimum 3/8 in. cove radius that extends at least 4 in. up the wall. Correct within 2 months. <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
