Non-compliance may warrant immediate closure of <br />the food facility. <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Facility has an operational 1 comp prep sink on site but not in use. As per Manager, they wash produce <br />in the 3 comp ware wash sink. Stop this practice immediately. Use the 1 comp prep sink to wash produce. I <br />observe frozen burger patties on the floor of the walk in freezer. Discard the contaminated food immediately. Store food <br />boxes and food bags 6 inches off the floor today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. Clean surfaces <br />today. Repeated violation. <br />Ice cream dispenser unit by the front hand sink, has milk spill on bottom shelf. Clean surface today and as needed. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #34 Warewashing Facilites Maintained <br />OBSERVATIONS: Prep sink compartment is totally blocked by items stored on top of it. Prep sink compartment has grease <br />accumulation and sticky food debris. Remove the items stored on top of the sink compartment for fully accessibility. Clean <br />and sanitize the sink compartment to be used for food preparation. Correct today. <br />CALCODE DESCRIPTION: Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br />materials shall be provided to measure the applicable sanitization method.
