(REPEAT) <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. Clean and sanitize cooler within two days. Maintain clean. <br /> The shelf below the three compartment sink was observed with dirty disposable being used as a shelf liner. (114115(c)) <br /> #34 Warewashing Facilites Maintained <br /> OBSERVATIONS:Quat sanitizer test strips were not available at the facility and the chlorine sanitizer test strips were <br /> expired. Obtain quat and chlorine sanitizer test strips to ensure proper sanitizing solution levels. Correct within seven days. <br /> CALCODE DESCRIPTION:Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br /> materials shall be provided to measure the applicable sanitization method.
