Set up sanitizer bucket with chlorine <br />100 ppm or more or with QUAT 200 ppm or more today. Corrected on site. Chlorine is now 100 ppm. Store <br />food 6 inches off the floor today. <br />I observe raw meat container stored on the same shelf with cut onion container and produce box. Store raw meat on bottom <br />shelves and ready to eat food, dairy, produce or cooked food on top shelves at all times. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. Clean surfaces today. <br />Hood filter plates, the surrounding surfaces of the filter plates and the fire suppressing pipes, exterior surfaces of the <br />cooking equipment have heavy grease accumulation. Clean hood interior surfaces and pipes and filter plates and exterior <br />surfaces of the cooking equipment in 1 week.
