Environmental Health Department <br />Facility Name and Address: DISCOUNT MARKET, 48 S SAN JOAQUIN ST, STOCKTON 95202 <br />Food Program Official Inspection Report <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed a dirty mop head stored on the wooden shelf containing Farmer Bros Cappuccino mix <br />containers and other food items. Remove immediately and store in a designated area away from food storage items. Correct <br />today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. (113984 (a, b, c, d, f), 113986, 114060, <br />114067(a, d, e, j), 114069(a, b), 114077, 114089.1 (c), 114143 (c)) <br /> #29 Toxic Substances Properly Identified/Stored/Used <br />OBSERVATIONS: Observed Raid and other insecticides stored on the same wooden shelf where the Farmer Bros <br />Cappuccino mixes and other food items are stored. Remove chemicals and store them away from food storage areas. <br />Correct today. <br />CALCODE DESCRIPTION: All poisonous substances, detergents, bleaches, and cleaning compounds shall be stored separate from food, <br />utensils, packing material and food-contact surfaces. (114254, 114254.1, 114254.2) <br /> #30 Food Storage/Display Properly Labeled <br />OBSERVATIONS: Observed the Farmer Bros Cappuccino mix containers, cereal, and other food items being stored on a <br />wooden shelf along with non-food items. Ensure only closed packaged food items are stored on this shelf. Remove all other <br />non-food items. Clean and remove all dust and debris. Paint shelf with cleanable paint so that the surface can be regularly <br />cleaned. Correct within one week. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving. (114047, 114049, 114051, 114053, 114055, 114067(h), 114069 (b)) <br /> #39 Thermometers Provided/Accurate/Easily Visible <br />OBSERVATIONS: The residential cooler was lacking a thermometer. The deli display cooler's digital thermometer was not <br />accurate by 8 degrees. Provide working thermometers inside the coolers and place in an easily visible locations. Correct <br />within seven days. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines. (114157, 114159) <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: Observed a wiping cloth on the sandwich prep table. Used wiping cloths may contain unhealthy levels of <br />bacteria and can potentially cross-contaminate food items when placed on food contact surfaces. Discontinue practice <br />today. Store wiping cloths that are still in use inside a bucket containing sanitizing solution at 100 - 200 PPM chlorine or 200 <br />- 400 PPM quats. Place unclean wiping cloths that are no longer in use inside the dirty linen bag away from food prep, <br />contact, and storage areas. Correct today. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
