(113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Sanitizing test strips were not available at the facility. Obtain sanitizing test strips to ensure sanitizing <br />solution has a concentration of 100 - 200 PPM chlorine or 200 - 400 PPM quat for proper sanitation of food preparation and <br />contact surfaces, dishes and utensils. The hand sink <br />and table were not separated by a splashguard. Provide a metal splashguard six inches in height from front edge to back <br />edge to avoid food contamination. Correct within 14 days. <br />------------------------- <br />Observed foam cups being used as scoops in several food containers. Remove cup and discontinue this practice to prevent <br />contamination of food. Correct today. <br />------------------------- <br />Observed a malodorous smell inside the meat case cooler. Find source and discard any contaminated food items. Clean <br />inside cooler to prevent contamination of other food items. Correct today. <br />------------------------- <br />Observed open food items inside the walk-in cooler. Place coverings such as lids, foil, or plastic wrap over the food items to <br />protect from contamination. Observed container of <br />tamale corn husk wrappers on the kitchen floor. Place and store all food items six inches off the floor. Correct today. <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving.
