All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#7 Hot and Cold Holding Temperatures Major <br />OBSERVATIONS: Observed beef and rice stored under griddle. Per manager the food was cooked around 7 AM at the <br />longview restaurant, then brought and stored under the griddle. The beef was 68 F and the rice was 58 F. Went over proper <br />cooling method with manager, foods shall be rapidly cooled from 135 F to 70 F within 2 hours and then cooled from 70 F to <br />41 F within 4 hours. PHFs must be kept 41 F or below for cold holding or 135 F or above for hot holding when not actively <br />being prepped. Corrected on site, the beef and rice were discarded. <br />The walk-in cooler was not turned on, there was boxes of frozen meat stored inside. Provide 41 F or below when cold <br />holding PHFs. Corrected on site, the walk-in cooler was turned on and it reached 41 F at the end of the inspection. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />#41 Plumbing Maintained; Approved Back Flow Device <br />OBSERVATIONS: Observed leaking from pipe under water heater. Repair leak today. <br />CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required <br />by applicable plumbing codes. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local plumbing <br />ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good repair. Any hose <br />used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other purpose.
