#38 Approved / Sufficient Ventilation and Lighting <br />OBSERVATIONS: Observed some of the lights in the front and back prep/cook lines are out. Replace bulbs to ensure <br />adequate lighting for the cleaning and inspection where open food is stored, served, and prepared. Correct within three <br />days. <br />CAL CODE DESCRIPTION: Exhaust hoods shall be provided to remove toxic gases, heat, grease, vapors and smoke and be approved by <br />the local building department. Canopy-type hoods shall extend 6" beyond a// cooking equipment. All areas shall have sufficient ventilation <br />to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window, an air shaft, or a <br />light-switch activated exhaust fan, consistent with local building codes. (114149, 114149.1) Adequate lighting shall be provided in all areas <br />to facilitate cleaning and inspection. Light fixtures in areas where open food is stored, served, prepared, and where utensils are washed <br />shall be of shatterproof construction or protected with light shields. (114149.2, 114149.3, 114252, 114252.1) <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM -- LOCATION --TEMP ° F -- COMMENTS <br />Walk-in cooler-- 37.00° F <br />COMMENTS AND OBSERVATIONS <br />Arrived at restaurant located at 18700 N HWY 88 located in Lockeford. Discussed the alleged complaint with the manager. <br />The manager connected me to the owner via phone call. Owner was aware of the complaint and reported that the piece of <br />glass was actually a piece of plastic that came off of the onion packaging. Owner stated employees will take extra measures <br />on food safety and granted inspection of restaurant. Verified employee's food handler certificates are current. Per chef, <br />omelets are prepared when an order comes in and are prepped on the prep table adjacent to the cook line. Eggs are stored <br />inside the walk-in cooler, currently at 37 F until ready for use. Did not observe any glass or plastics around egg prep or <br />storage areas. Verified orange juice to be stored in the walk-in cooler, currently at 37 F and within best by dates. The orange <br />juice dispenser was observed with orange juice spillage. Did not observe mold in any of the orange product or dispenser. <br />Inspection report wasemailed to owner. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
