Set up sanitizer bucket with QUAT 200 ppm today. Corrected on site. <br />Repeated violation. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Store the onion bags 6 inches off the floor. <br />Correct today. <br />I observe open bag of dry food at the back storage area. Store dry food in a container with tight lid and label today. <br />I observe raw chicken container stored on the same shelf with cooked chicken in the walk in cooler. Stop this practice <br />immediately. store raw meat at bottom shelves and cooked / ready to eat food at top shelves. (114115 (c)) <br /> #41 Plumbing Maintained; Approved Back Flow Device <br />OBSERVATIONS: Pipe, draining the dish washer in the floor sink under the 3 comp sink, is lacking air gap. Provide air gap <br />at least 1 inch off the floor sink. Correct in 1 week. <br />CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required <br />by applicable plumbing codes. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local plumbing <br />ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good repair.
