Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: The dish machine is not dispensing any detectable sanitizer at the final rinse. Ran the machine three <br />times: 0ppm / 0ppm / 0ppm. <br />Repair the machine to function properly and provide chlorine sanitizer at 50ppm (minimum) prior to use. <br />Use the manual warewash procedure: wash, rinse, sanitize (100ppm Cl) and air dry. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized.
