Spicy chicken deluxe is made of fried breaded chicken with lettuce,tomatoes and cheese. Raw <br /> chicken is received frozen, held in the walk in freezer. Frozen chicken will be held in lean chicken thawed coolers(41 F or <br /> below).At the breading station, raw chicken is soaked in the milk wash and breaded to be deeply fried at 350F for 4.5 minutes <br /> then held on the hot hold at 167F for 20 minutes.Tomatoes is sliced on site and placed on ice bath at the central prep line. <br /> Lettuce received precut and previously washed to be stored in the walk in cooler 41 F then stored in containers and held at the <br /> prep line at 41 F. Cheese on the central prep line is at 41 F.AII hand sinks at the back and front of the house are at 100F or <br /> more, accessible and fully supplied with soap and paper towels. Sanitizer buckets are set up with QUAT 400 ppm. High temp <br /> dish washer provide 160F at utensils surfaces.Ware wash sink and prep sink have hot water at 120F or more. QUAT strips <br /> are available on site. Rest rooms are available and operational.All food manager certificates are valid and on site. Raw <br /> chicken stored in separate coolers for thawing away from the produce and ready to eat food in the walk in cooler to avoid any <br /> cross contamination. Chemicals are stored in separate room away from food prep area and clean utensils storage area. <br /> Employees are using gloves to prepare food and gloves are available.
