All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #21 Hot and Cold Potable Water Not Available MAJOR <br />OBSERVATIONS: Hot water at hand sinks, prep sink, and 3 comp sink observed at 93-96 F. Per owner, pilot had been <br />turned off and was turned back on during inspection. Corrected on site. Hot water raised to 100 F in all sinks. Provide a <br />minimum of 120 F at 3 comp and prep sink today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: Employees were not recording/documenting time for food currently being held outside of temperature <br />control. Resume record keeping or store at 41 F or cooler. Discard food items held longer than four hours. Correct onsite. <br />Manager provided new logs to resume temperature control on site. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed uncovered sauce container in upright display refrigerator. Observed sauce containers in walk <br />in cooler without a cover. Cover container with lid, foil, or plastic wrap to protect from contamination.
