<br /> OBSERVATIONS:Copies of the 5-year food manager and 3-year food handler certificates are not on site. One person is
<br /> required to have a 5-year food manager certificate.All other employees that are handling food are required to obtain the
<br /> 3-year food handler certificate within 30 days from date of hire. Obtain certificates and maintain all copies on site. Provide a
<br /> copy of the 5-year food manager certificate to cmuro@sjgov.org within 60 days.
<br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their

<br /> OBSERVATIONS:Sanitizing test strips were not available at the facility. Obtain sanitizing test strips to ensure sanitizing
<br /> solution has the required concentration for proper sanitation of food contact appliances, utensils, and surfaces. Correct prior
<br /> to operation.

<br /> OBSERVATIONS:Sanitizer for warewashing was not observed at the mobile food facility. Provide chlorine sanitizer with
<br /> concentration of 100-200 Parts Per Million (PPM)for sanitation of surfaces and warewashing. Correct before operation.

<br /> OBSERVATIONS:The left pass-through service window does not fully close unless it is forced shut. Repair window to fully
<br /> close between services and prevent flies and other vectors from entering the food facility. Correct prior to operation.
