June 8, 2023 <br />ATTN: JORGE BARRIGA <br />TACOS ALDIA-MANTE #2 LLC <br />227 CORONADO WAY <br />TRACY, CA 95376 <br />RE PROPOSED: TACOS ALDIA-MANTE #2— SR0086754 <br />COMMISSARY NEEDED <br />Dear Mr. Barriga: <br />This letter indicates San Joaquin County Environmental Health Department (EHD) approval of <br />drawings submitted for the proposed TACOS ALDIA-MANTE #2 — SR0086754 subject to the <br />following condition(s): <br />Obtain a State Mobile Food Preparation Unit "Insignia" if necessary. Contact State <br />Housing and Community Development for approval of your commercial coach at (916) <br />255-2501. <br />Obtain a verification of commissary. <br />Potable and wastewater tanks must be sloped to an outlet that ensures complete <br />drainage. (114199) <br />The entrance door must be self-closing. (114303) <br />Floor mounted equipment shall be sealed to floor or at least 6" off the floor on easily <br />cleanable legs and feet. (114301(g) <br />Equipment shall be sealed together or spaced a minimum of 4" apart from each other. <br />(114301 (g) <br />Equipment joints and seams shall be tightly fitted and sealed; silicone sealant or <br />waterproof compounds if gap is smaller than 1/4 inch. (114301(b) <br />No exposed threads, nuts, or rivets that interfere with proper cleaning. (114301(g) <br />Light bulbs and tubes shall be enclosed in a plastic safety shield or equivalent. (114323 <br />(c)) <br />The EHD must be kept informed of the construction progress. A final inspection must be <br />performed, operating permit fees paid, and approval to operate granted prior to opening for <br />business.
