WALNUT STREET <br />STOCKTON, CA 95205 <br />RE PROPOSED: TORTILLERIA (DONA MARI) — SR0086476 <br />COMMISSARY NEEDED <br />Dear Ms. Martinez: <br />This letter indicates San Joaquin County Environmental Health Department (EHD) approval of drawings <br />submitted for the proposed Tortilleria (Dona Mari) — SR0086476, subject to the following condition(s): <br />All manufactured and custom made food service equipment must be certified for sanitiation by an <br />American National Standards Institute (ANSI) accredidation certification program. All proposed <br />equipment is subject to EHD approval (CRFC § 114130). <br />Floor and wall junction shall be coved with 3/8" minimum radius coving and the floor surface shall <br />extend up at least 4 inches (CRFC § 114301(g)). <br />Floor mounted equipment shall be sealed to the floor or at least 6" off the floor on easily <br />cleanable legs and feet [CRFC § 114301(g)]. <br />Light bulbs and tubes shall be enclosed in plastic safety shield or equivalent [CRFC § 114323(c)]. <br />The pass trhrough window opening shall be equipped with a self-closing window or screen. The <br />screen shall be at least 16 mesh/inch [CRFC § 114259.2]. <br />Obtain a State Mobile Food Preparation Unit "Insignia" if necessary.
