All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization MAJOR <br />OBSERVATIONS: The dishwasher is not currently sanitizing at a minimum of 50 ppm chlorine. Repair dishwasher so that it <br />is in good working order. Manually sanitize dishes and utensils in 100 ppm minimum chlorine or 200 ppm minimum quat <br />sanitizer until dishwasher is properly sanitizing. Install a single use paper towel <br />dispenser and maintain stocked and in good working order at all times. Correct today. <br />Paper towels at the employee restroom hand sink were not currently stocked inside the single-use paper towel dispenser. <br />Maintain the dispenser stocked at all times and in good repair to ensure proper hand washing. Correct today. <br />The kitchen hand sink lacked paper towels. Maintain paper towel dispenser stocked and in good working order at all times. <br />Correct today. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair. (113953.2) Adequate facilities shall be provided for hand washing, food preparation and the washing of <br />utensils and equipment. (113953, 113953.1, 114067(f)) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: A fly paper strip was observed hanging from the ceiling above the breading station. Move fly paper strip <br />to an area that is not over food or food related items to avoid contamination of food. Correct today. <br />Observed bowls being used as scoops in the dry storage containers (flour, sugar, etc.) and in the sauce in the three door <br />prep cooler across from the hood.
