All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: Pinto beans, on the cooking area hot hold unit, is at 130F. Provide 135F or more today. <br />Employee starts to re heat the food on the stove to get to 165F for at least 15 secs then to be held on the hot hold unit. <br />Diced tomatoes, on the cold hold unit, at the cooking area, is at 44F. Provide 41F or below today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: Mop sink has temp at 116F. Provide 120F or more today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: I observe 2 boxes of frozen meat placed on the floor by the walk in freezer to be thawed. Stop this <br />practice immediately and adopt one of the methods mentioned in the paragraph below. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: I observe raw meat containers stored on the same shelf with cooked/ ready to eat food containers. Stop <br />this practice immediately. Store raw meat at bottom shelves and cooked / ready to eat food at top shelves at all times to <br />avoid any potential contamination. Corrected on site. <br />I observe the ice scoop stored on top of beverage box across the ice maker. Wash, sanitize the scoop and store it in clean <br />bin when not in use. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination.
