Non-compliance may warrant immediate closure of the food facility. #7 Hot and Cold Holding Temperatures OBSERVATIONS: Pinto beans, on the cooking area hot hold unit, is at 130F. Provide 135F or more today. Employee starts to re heat the food on the stove to get to 165F for at least 15 secs then to be held on the hot hold unit. Diced tomatoes, on the cold hold unit, at the cooking area, is at 44F. Provide 41F or below today. CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) #26 Approved Thawing Methods OBSERVATIONS: I observe 2 boxes of frozen meat placed on the floor by the walk in freezer to be thawed. Stop this practice immediately and adopt one of the methods mentioned in the paragraph below. CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) #27 Food Protected from Contamination OBSERVATIONS: I observe raw meat containers stored on the same shelf with cooked/ ready to eat food containers. Stop this practice immediately. Store raw meat at bottom shelves and cooked / ready to eat food at top shelves at all times to avoid any potential contamination. Corrected on site. I observe the ice scoop stored on top of beverage box across the ice maker. Wash, sanitize the scoop and store it in clean bin when not in use.
