All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Food manager and food handler certificates (only a couple food handler cards available) were not <br />available during the inspection. One person is required to have a food manager certificate. All other employees who handle <br />food are required to obtain the 3-year Food Handler Certificate within 30 days from date of hire. Provide copy of the food <br />manager certificate to fgarciaruiz@sjgov.org within 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #4 Employee Eating, Tasting, Drinking or Tobacco Use <br />OBSERVATIONS: Observed employee food in food prep area. Employees shall not eat, drink, or smoke in any food <br />prep/service area. Discontinue practice immediately. Corrected on site. Food was removed from on top of 2 door reach in <br />(wrap prep cooler) by manager. <br />CALCODE DESCRIPTION: No employees shall eat, drink, or smoke in any work area. (113977) <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: Observed hot hold unit at waiter line to be 130 F. Increase temperature unit to maintain hot holding food <br />items at 135 F minimum. Corrected on site. Hot hold increased to 135 F. <br />The cold holding temperature inside the 2 door reach in under wrap prep was observed at 49F. Adjust unit so that they <br />maintain 41 F or below. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F.
