As per operator, she is not aware of the complaint. No reported illness by employees. No employees working for other food <br /> facilities, day care or health care facilities. Staff consuming food eaten by complainant. No out of the country traveling by <br /> employees. Raw chicken is received frozen, stored in walk in cooler to defrost at(41 F).Another method is used to thaw <br /> chicken, is to keep it under running water in prep sink to be cooked ( Boiled), shredded then grilled and to be held on hot hold <br /> to serve. Tortilla is purchased from approved source, stored on clean shelves to serve. Sauce is received shelf stable cans. <br /> Sauce is boiled, seasoned by adding spices and some oil then held on the hot hold or in containers in the walk in cooler for <br /> future use.The cheese used in Enchilalda is Monterey Jack cheese.lt is received in bulks, prepared (shredded)by back <br /> shredder equipment and stored in containers in the walk in cooler or on cold hold unit at the prep line in cooking area . Hand <br /> sinks at cooking area, at waitress station are accessible and fully supplied with soap and paper towels.Valid food manager <br /> certificate and food handler cards are on site.Ware wash sink and prep sink have hot water at 120F or more. Chlorine strips <br /> are available on site. Rest rooms are operational and fully supplied with soap and paper towels.Accurate probe thermometer <br /> is available on site. Chemicals are stored away from food prep area and clean utensils storage area.
