Thoroughly clean and sanitize the microwave and maintain clean <br />daily and as needed. Correct today. <br />OBSERVATIONS: Sanitizing test strips were not available at the facility. Obtain sanitizing test strips to ensure the sanitizing <br />solution has a concentration of chlorine 100 - 200 Parts Per Million (PPM) for proper sanitation of all food contact surfaces and <br />the warewashing of equipment and utensils. Correct prior to operation. <br />OBSERVATIONS: The cooling fan covers inside the walk-in cooler had debris accumulation. Clean and maintain to protect <br />stored food items from fallen debris. Correct today. <br />OBSERVATIONS: The 3-compartment warewash sink was observed to be unclean. Clean and sanitize sink and maintain free <br />and clear when not warewashing.
