All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate <br />closure of the food facility. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: As per operator, facility is using bleach to sanitize utensils. Bleach is not available on site. Facility is using <br />spray bottle with citric acid to sanitize food contact surfaces. Citric acid is not an approved sanitizer to be used in commercial <br />kitchen. Stop using citric acid as a sanitizer immediately. Provide Chlorine to sanitize utensils and food contact surfaces <br />today. Corrected on site. <br />Bleach provided during my inspection. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br />This is (Major) Violation. <br />MAJOR <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: Right residential cooler in the washing area, has temp at 49F. Provide 41F or below today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />This is (Minor - Food) Violation. <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: I observe sticky debris on exterior surface by door handle of the left side 1 D cooler. Bottom shelves of right <br />and left 1 D coolers are dirty. Clean interior and exterior surfaces of the cooler units today and as needed. <br />Bottom shelf of the cabinet, under the ware wash sink, is dirty. Clean bottom shelf today and as needed. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean.
