Adjust the hand wash sink water temperature to <br />maintain 100 - 108 F as they are non-adjustable faucets. Correct today. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br />OBSERVATIONS: The back hand sink was out of order due to a broken handle. Repair hand sink so that it is in good working <br />order with warm and cold water. Correct today. <br />The three compartment sink lacks an air gap. Provide a gap distance of a minimum of one inch between the top of the floor sink <br />and bottom of the waste pipes. Correct within one week. <br />OBSERVATIONS: A food manager’s certificate was not available during the inspection. Provide a copy of a valid 5 - year food <br />manager’s certificate to lbaker@sjgov.org within 60 days of permit issuance. <br />Two door M3 cooler -- 39° Fahrenheit <br />Nacho cheese -- Warmer -- 135° Fahrenheit <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all <br />times. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local <br />plumbing ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good <br />repair. Any hose used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other <br />purpose.
