Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:The following unit for cold storage of Potentially Hazardous Foods(PHFs)was observed at higher than the <br /> required temperature of 41 F: <br /> -Walk-in cooler containing boxes of shredded cheese,yeast, sauce containers, dough, chicken wings, dipping sauce <br /> containers was observed at 48 F <br /> Adjust/repair cooler to maintain all PHFs at 41 F or below.The PHFs held less than four hours need to be transferred to a <br /> cooler at 41 F immediately.All PHFs currently at 50 F or higher and that have exceeded the maximum hold time of 4-hours <br /> must be discarded.
