Environmental Health Department <br />Facility Name and Address: DE VINCI'S DELICATESSEN, 4555 N PERSHING AVE, STOCKTON 95207 <br />Food Program Official Inspection Report <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Current food handler cards were not available during the inspection. Provide a copy of all valid 3-year food <br />handler cards to lbaker@sjgov.org within two weeks. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br />This is (Minor - Food) Violation. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Bottom of the ice chute on the soda dispenser was observed with black build-up. Clean and sanitize ice <br />chute to prevent the contamination of drinks. Correct today. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br />This is (Minor - Food) Violation. <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Observed a package of ground beef on a pan thawing. Thaw food items under refrigeration, completely <br />submerged under cold running water, in the microwave oven or during the cooking process. Correct today. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient <br />velocity to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br />This is (Minor) Violation. <br /> #45 Floors, Walls, Ceilings; Clean and Maintained <br />OBSERVATIONS: The ceiling was observed damaged near the hood. Repair ceiling so that it is smooth, cleanable and <br />non-absorbent within one week. (REPEAT) <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All <br />floor surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is <br />easily cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in <br />original unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
