On February <br /> 22"d, 2006 you emailed me with two (2) additional comments that needed to be addressed <br /> prior to SJCEHD approval of the high school. Please find attached the responses addressing <br /> the two (2)comments: <br /> 1) The Cappuccino machine is neither self-cleaning, nor is it ANSI rated showing that it <br /> meets NFS standards. This machine is not allowed. All equipment in any <br /> commercial food facility must meet this standard. As far as being self-cleaning,we <br /> know of none that are self-cleaning. Because this piece of machinery needs to <br /> washed, rinsed and sanitized, we are requiring a 3-compartment sink to be located in <br /> this area. This sink must supply 120F degree water at this location. Depending on <br /> the size of the sink basins, the Wattage will vary. Contact this department once a <br /> sink size has been determined so the size of the heater can be calculated. The <br /> alternative is to remove the coffee machine entirely. <br /> • We went back to the original espresso machine(Kimball Espresso <br /> Machine.pdf) and added the 3-compartment sink(sink @ intemet cafe.pdf). <br /> Our plumbing engineer then changed the water heater(Water Heater.pdf). <br /> Please review for compliance <br /> 2) The flooring in janitorial and food service areas show concrete with rubber of vinyl <br /> coving. This coving is not allowed. The coving must be continuous with the <br /> flooring. Sheet vinyl or Ceramic tile is recommended in these locations <br /> • We updated our finish schedule(23148 A7.1 finish schedule and legend.pdf). <br /> Janitors' closets and vending areas now have sealed concrete floors and curbs. <br /> The unit M foodservice areas are self coved poured epoxy.
