ORDERED CATFISH, LIVER <br /> AND ONIONS AND CLAM CHOWDER. CATFISH AND LIVER WERE UNDERCOOKED AND RARE. CLAM CHOWDER <br /> HAD A FOREIGN OBJECT THE SIZE OF A GRAPE AND BLACK IN COLOR. NO ONE AT THE FACILITY COULD <br /> EXPLAIN WHAT IT WAS." <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Owner(via phone call)was not <br /> aware of the"undercooked catfish and liver"portion of the complaint. <br /> The customer notified one of the service staff on duty about the foreign object they allegedly found in the clam chowder. <br /> Customer wrapped object in a napkin and took it with them. <br /> Clam chowder is house made. Ingredients are: canned clams, celery, potatoes, onions, and cream soup base mix <br /> (pre-packaged Le Gout brand/3 bags are used per batch of clam chowder). Produce is received fresh and whole. Produce is <br /> washed and prepped on site.Visual inspection of produce for abnormalities is made during food prep. <br /> Inspector visually inspected the clam chowder at hot hold this date and no foreign objects were observed. <br /> Catfish is received and stored frozen until a customer orders it. Catfish is thawed in the microwave and then breaded (if the <br /> customer orders fried)and fried, or placed in theAir Fryer and baked (if customer orders baked). Cooked temperatures of <br /> both baked and fried catfish this date are 195-197F. <br /> Liver is received and stored frozen until a customer orders it. Liver is thawed in the microwave and then breaded. Breaded <br /> liver is then cooked on the flat top. Cooked liver temperature this date is 187F. <br /> Facility has food thermometers.
