Instructed employee to wash his <br /> hands prior to resuming food prep. He rinsed his hands at the sink without using soap and then dried them on a dirty towel. <br /> Re-educate employees on proper handwashing techniques and frequencies. <br /> CALCODE DESCRIPTION:Employees are required to wash their hands:before beginning work before handling food/equipment/ <br /> utensils as often as necessary, during food preparation, to remove soil and contamination when switching from working with raw to ready <br /> to eat foods,after touching body parts after using toilet room or any time when contamination may occur. Hot water at the 3-comp sink, <br /> hand sinks, and mop sink is 58F. The wiring at the tankless hot water heater was disconnected. Immediately provide hot <br /> water of 120F(minimum)to avoid closure. Hot water was restored at 11:46am. Corrected on site. <br /> The water was turned off at the 1 comp prep sink at the start of the inspection. Maintain water turned on at all sinks at all <br /> times. Correct today.
